im trying to replace my flexplate and it has an oddball count of 142 teeth, and I cant seem to find any replacements for it, can I just swap it out for a different count? not sure how that would affect the starter

Yes, the Mustang II with 302 and C4 had a smaller bellhousing and flexplate than the rest of the Ford production cars. Most of the trucks and van got even a bigger bellhousing/flexplate
