I agree....toss it.
The AC should switch to coming out the DEFROST when accelerating. Very common and NOT an issue. Just the way it is. All my Maverick AC cars do...
I have headrests as well.
Pull plug from tank. Jump the wires across the plug to each other. With key on, gauge should now go to FULL. Check that.

I would imagine with enough heat, that would unthread and would be able to remove it.

When you say "evaporator", you mean the one inside the AC/Heater box?
To do the conversion expect to spend $800 to $1000 just for all the parts (even if they are all used).
