So I have the cruise control on, going 65 for about 15 miles, and all of a sudden BING-BING-BING "CHECK GAUGES" comes up.

Oil pressure gauge has dropped to ZERO!!!

I let off the gas and try to immediately find a place to safely pull over and check things out, and the pressure comes back up about 5 seconds later.

Oil level on dipstick is normal. Color is clean. I am only 1500 miles into the last oil change. And this has not occurred again since, over the past week, and I have put on about 600 miles.

I am assuming a sensor wire or something shorted out for a second.

Any other ideas? Should I worry and start saving up for a new engine?

Disconnect to wire going to the oil pressure sensor I believe its a green connector (haven't worked on many mopars in a few years). They leak oil through the sensor and fill the connector with oil and cause issues like you describe.
