I watched the Edelbrock video for carb installation. They said not to connect the red cable on the electric choke to the coil or to the alternator. They said to connect it to the fuse box in a slot that says "key accessory" but I don't have a slot like that in my fuse box. Where can I connect the red cable?

If you havent allready used it,there should be an accessory bung in the fuse box.It will look like a single male spade terminal or a single clip set for a round fuse. This should also be marked "ACC" Its allmost centered on the fuse box (adjacent to the center bolt in the box)This will do what you need it too.

Or look at the factory plugs coming out of the firewall, one will have been for the factory choke. ONe of the black plugs, around the master cylinder.

The factory hooked the 12v supply to the 'S' terminal on the alternator.

Yep, so it only has power with the engine running. Otherwise if it was hooked to an ignition feed for example the choke would heat up and open with key on and engine not running.
