Pedal assembly mounts above column, you may be able to unbolt column and lower it down to remove pedal assembly but IMO remove it and make things...
Even the factory supplied scissor jacks will bend the rocker pinch welds all to heck.
IMO, Torque boxes are best.
Trying to make this decision is putting to much stress on you, I think you should sell the Maverick.
I’ve done it several times, call the insurance company give them the vin.... although I’ve never put full coverage on one, if totaled the owner...
