Define "pro" builder. My opinion is that there are none here. Sure, some guys on this site have built some damn nice cars and are talented (which to me is only a slight extension of how much time and resources you have), but to me those are hobbyists. When someone opens a full time shop dedicated to nothing but the restoration and hot rodding of these cars, and dosen't take a loss doing it, I'd be willing to call them pro. Sitting around in your garage or someone else's borrowed shop space building a car for yourself is a hobby.
