can anyone give me some insight on how to begin and start finding new original seat fabrics. Red seems to be hardest to find. Also will be my first time painting this car should I go single stage or what? Going back original bright red

There is a company that reproduces automotive fabric, if they do not already have it they can make it, though it is not cheap by any means. They can send you a sample or you can send them one.
As far as painting goes if you are a novice painter it would be better to stick to a single stage as clear coating can be a chore but you get a deeper color with clear coating. As with all painting prep work is the most important part. I am sure others will have some different words of wisdom on the paint subject. Below is a link to the fabric outlet.

I'm with Mike all the way here. Clearcoating adds more steps.. therefor more cost and chances for mistakes and contamination.

SMS has your fabric if you want to stay stock. Many others not concerned with OEM appearances have used front bucket seat kits from Mustangs. From there you have to get more creative if also using the full mustang kits backseat covers.
