you have several options for both the power steering and the disk brakes.

you can get a stock power steering system used. just ask in the classifieds section. or you could do the borgeson http://www.borgeson.com/xcart/catalog/19701977_Ford_Maverick-orderby_0-p-1-c-126.html conversion.
i have done this conversion and it is great. the stock power steering is a bad system. prone to leaks and a sloppy feel.
the borgeson is a really good upgrade and gives a really modern feel to the steering.

their are lots of options for the disk brake conversion. i would suggest doing a search for disk brake swap to get some of the options that you have.

parts wise would be around $1500-$2000+ depending on what options and kits you use.
for the borgeson steering conversion, it requires a power steering pump. you can get a good used power steering pump and its brackets from some one on this site or borgeson should have some new stuff that will work.
people will sell used disk brake setups that will work or you can get new stuff or even high performance disk brakes.

i cant speak for another shops labor if your going to have the parts installed.
