I recently replaced my carburetor gasket on my 250. Everything is stock as far as I know. But now the carb and air cleaner hit the hood. You can visibly see a difference when you shut the hood. I never had this problem before. The new gasket wasn't much thicker than the old one.

How much thicker is the new gasket compared to the original gasket? Mavericks have a substantial amount of hood clearance, so something is not right...
The Maverick hood is the lowest of the Falcon Six based cars. The 250 is basically a 'stroked' 200 with a block deck height almost 2" taller than the 200 - needing the unique Carter RBS carb with the squat profile and low fuel bowl. Later (75 up ?) used the YF with a unique but different Air Cleaner. If carb or AC have been switched at any point, there may be interference with the low hood line. hav e fun RBS YF'as
I assume the I-6 is taller than the V-8, because I'm running a Weiand stealth high-rise intake with a half-inch carb spacer, Holley 4150 series carb, and a full-size air cleaner without any clearance problems. In any case, the O.P. says he only replaced the carb gasket...
