I have a 1973 Maverick, with a package tray. It seems it was made late '72, using the last of the old style tray. My question is, what is the difference between the radios for each year, and the mounting and faceplate. Would a 1973 radio setup work with this package tray setup, or would a 1972 radio be a better bet?

The Radios are interchangable. What's diffrent is the Radio face plate. package tray face plate vs. glove box face plate. those are not interchangable.
