I dont know what years but when I took the power steering out of my old pickup I used to break the steering coupler (rag joint) all the time. you might not have this problem since the car is lighter than a truck but just be aware that might give you a problem.
my 72 comet with the 302 hasnt had a problem so far. it has the coupler like a power steering car has but with no power steering set up
PS mine only has a 2 belt pully so that might help

Be sure to change the steering box too, as I believe the PS and non-PS boxes have different ratios. I would also check to see if there are older 302 cars (mustangs, Falcons 289, etc) that may have come with a V8 and no power steering. Then you could just change your belt and not have to worry about pulleys.

Then there's the "autoparts store" method: use a string and measure the length and match it up to something at your local parts store.

What part of Tennessee are you in? I might know a friend of a friend who'd be willing to adopt some of those power steering components you're ripping out...
