I am converting my maverick to manual steering. I was wondering what parts I would need and what year cars could I get them from ?

Three ways to do it....Get the valve replacement piece from a Mustang house and keep everything else the same without the pump and cylinder...or....get a manual pittman arm to put on you power box and the manual center link....or....get a manual box, pittman arm, and center link. Any Maverick manual pittman arm and centerlink will change out with the power unit, with the possible exception of the 69 1/2 [very early 70] pieces which were Falcon based.
