Wire harness replacement

    In the middle of an engine swap in my 77 (ish) and noticing the wiring harness isn't in great shape neither in the engine bay nor under the dash. What are my options for replacement harness without replacing EVERY wire in the car? I'm not ripping out the interior so don't particularly want to rerun the wires to the rear, etc. I'd really just like to replace everything under the dash and of course going through firewall into the engine bay. I've never replaced a harness before so how does one decide how many circuits are needed? I have:

    Carb engine
    Electric fans
    3g alternator
    AC compressor
    Factory AC controls
    Few gauges inside
    Stereo

    Seems like what your looking to do, is add a fuse panel w/ switched/unswitched circuits. One of the aftermarket panel mfg./vendors can supply a panel.
